Holstein cattle, also known as Holstein-Friesian cattle, are a breed of dairy cattle that originated from the Dutch provinces of North Holland and Friesland, and Schleswig-Holstein in Northern Germany. They are known for their distinctive black and white markings and are one of the most prominent and recognized dairy cattle breeds in the world. Holstein cattle are renowned for their high milk production, contributing significantly to the global dairy industry.

The Holstein breed has a rich history that dates back several centuries. The breed was officially formed in the early 19th century through the crossbreeding of local Dutch cattle with imported breeds from England and Germany. Holstein cattle are easily identifiable by their black and white patched coat, although red and white variants exist due to a genetic mutation. They are large animals, with cows weighing an average of 1,500 pounds and bulls weighing over 2,000 pounds. Holsteins have a high milk yield compared to other dairy breeds; a typical cow can produce around 23,000 pounds of milk per lactation, with some individuals exceeding this average.

The milk from Holstein cattle has a relatively low butterfat content, averaging around 3.6%, which is suitable for the production of many dairy products, including cheese and skim milk.

Selective breeding has played a significant role in the development of the Holstein breed. Breeders have focused on traits such as milk volume, milk quality, and efficiency of feed conversion to milk.
