French cuisine is renowned worldwide for its rich flavors, diverse ingredients, and sophisticated techniques. Among the many culinary delights that France has to offer, its soups and stews hold a special place. Soups[edit | edit source]

Bouillabaisse is a traditional Provençal fish stew originating from the port city of Marseille. It typically uses three types of fish and various other seafood like crabs and shellfish, along with vegetables.

Potage is a category of thick, creamy soups which are typically puréed. Potage Parmentier, for example, is a simple potato and leek soup, named after Antoine-Augustin Parmentier, a promoter of potato cultivation in France.

Bisque is a smooth, creamy soup that is traditionally made with shellfish, such as lobster, crab, shrimp, or crayfish. The shells are used to create a rich broth, while the meat is incorporated into the soup itself.

Vichyssoise is a thick soup made of puréed leeks, onions, potatoes, cream, and chicken stock, traditionally served cold, though it can also be eaten hot.

Boeuf bourguignon is a well-known, traditional French stew prepared with beef braised in red wine, often red Burgundy, and beef broth, generally flavoured with carrots, onions, and garlic, and garnished with pearl onions, mushrooms, and bacon.

Coq au vin is a French dish of chicken braised with wine, lardons, mushrooms, and optionally garlic. While the wine is typically Burgundy, many regions of France have variants using the local wine.

Cassoulet is a rich, slow-cooked casserole originating in the south of France, containing meat (typically pork sausages, goose, duck and sometimes mutton), pork skin (couennes) and white beans (haricots blancs).

Ratatouille is a French Provençal stewed vegetable dish, originating in Nice, and sometimes referred to as ratatouille niçoise.
