Ruanzhi tea

Ruanzhi tea is a type of Oolong tea that originates from Taiwan. It is also known as Tung Ting tea and Frozen Summit tea. The tea is named after the Ruan Zhi cultivar, a type of tea plant used to produce this unique tea.

Ruanzhi tea is produced using a unique process that involves a combination of traditional and modern tea-making techniques. The tea leaves are first withered under the sun, then they are shaken in bamboo trays to bruise the edges of the leaves. This process is known as oxidation. The leaves are then wrapped in cloth and rolled into a ball shape, which is a characteristic feature of Ruanzhi tea. The tea is then baked at a low temperature to stop the oxidation process and to dry the leaves.
