The production of whisky in Taiwan began in the early 21st century. The most notable distillery, Kavalan Distillery, was established in 2005 by the King Car Group. The distillery quickly gained acclaim for its single malt whiskies, which have won numerous awards in international competitions.

Taiwanese whisky is primarily produced using malted barley, similar to Scotch whisky. The climate in Taiwan, which is subtropical, plays a significant role in the maturation process. The warm and humid conditions accelerate the aging of the whisky, resulting in a distinct flavor profile that is different from whiskies aged in cooler climates.

Another notable distillery is the Nantou Distillery, which produces Omar Single Malt Whisky. This distillery is operated by the Taiwan Tobacco and Liquor Corporation and has also gained recognition for its quality products.
