The Culinary Institute of America was established in 1946 by Frances Roth and Katharine Angell in New Haven, Connecticut. In 1951, the school was renamed the Culinary Institute of America.

In 1972, the CIA moved to its current location in Hyde Park, New York, occupying the former St. Andrew-on-Hudson Jesuit novitiate. This move allowed the CIA to expand its facilities and programs significantly.
