Vin jaune
Vin jaune (French for "yellow wine") is a special and characteristic type of white wine made in the Jura wine region in eastern France. It is made from the Savagnin grape, which is known for its ability to age well and develop complex flavors.

Vin jaune is produced in a unique manner that sets it apart from other wines. After fermentation, the wine is aged in oak barrels for a minimum of six years and three months. During this aging process, the wine is not topped up, allowing a layer of yeast known as "voile" (veil) to form on the surface. This yeast layer protects the wine from oxidation and contributes to its distinctive flavor profile.

Vin jaune is known for its deep golden color and complex, nutty flavors. It often exhibits notes of walnut, hazelnut, spice, and dried fruit. The wine is typically dry and has a high acidity, which helps it to age gracefully for many years.

Vin jaune is bottled in a special 620 ml bottle known as a "clavelin." This unique bottle size is a nod to the amount of wine that remains after the aging process, as approximately one-third of the wine evaporates during the six-year aging period.
