Yakut cuisine is the traditional cuisine of the Yakut people, who are indigenous to the Sakha Republic in Russia. This cuisine is characterized by its adaptation to the subarctic climate of the region, with a heavy reliance on meat, fish, and dairy products. Due to the harsh winters and short summers, the Yakut have developed unique methods of food preservation and preparation that reflect their cultural heritage and the necessities of their environment.

The foundation of Yakut cuisine is based on the animals that are native to the region. This includes:

  • Horse meat: Considered a staple, it is often used in various dishes, including stroganina (thinly sliced frozen raw fish or meat).
  • Fish: With numerous rivers and lakes, fish such as salmon, pike, and sturgeon are commonly consumed, either fresh, frozen, smoked, or dried.
  • Dairy products: The Yakut people produce a variety of dairy products from the milk of cows, horses, and reindeer. These include kurut (dried yogurt balls) and araka (a fermented dairy drink).

One of the most iconic dishes of Yakut cuisine is Indigirka, a salad made from frozen raw fish, typically whitefish, seasoned with salt and spices. Another traditional dish is Khangal, a type of meat pie.

Given the extreme climate, traditional Yakut cuisine employs several preservation techniques:

  • Freezing: The most common method, used for both meat and fish.
  • Drying: Used for meat, fish, and dairy products.
