Anchovies are small salt water fish that are closely related to sardines.

Mostly found in salt water and brackish waters
Canned anchovies[edit | edit source]
- Anchovies are most often found as canned filets that have been salted and preserved in oil.
- Imported anchovy filets packed in olive oil are the most commonly available;
What to look for?[edit | edit source]
Those packed in salt, available canned in some italian delicatessens, are considered the finest.
