Coconut milk is a creamy, rich liquid made from the meat of mature coconuts. Coconut milk is not to be confused with coconut water, which is the clear liquid found inside a young, green coconut. The production of coconut milk involves grating the white inner flesh of mature coconuts and mixing it with water. The mixture is then squeezed through a cheesecloth or a fine strainer to produce a thick, creamy liquid. The first squeeze results in what is called "thick" or "first-pressed" coconut milk. Additional water can be added to the solids to produce a second, thinner batch of milk, often referred to as "thin" or "second-pressed" coconut milk.
