Cora (restaurant)

Cora is a Canadian chain of casual dining restaurants. Founded in 1987 by Corinne Asselin, the restaurant is known for its breakfast and lunch menus. The first Cora restaurant was opened in Montreal, Quebec, and has since expanded across Canada, with over 130 locations as of 2021.

Corinne Asselin, a single mother with three children, opened the first Cora restaurant in 1987 in Montreal's Saint-Laurent borough. The restaurant was named after her daughter, Cora. Initially, the restaurant only served lunch and dinner, but Asselin soon introduced a breakfast menu that quickly became popular.

In 1995, the first franchised Cora restaurant was opened. The franchise model allowed for rapid expansion across Quebec and eventually the rest of Canada. Today, Cora is one of the largest breakfast and lunch chains in Canada.

Cora's menu focuses on breakfast and lunch items, with a particular emphasis on fresh fruit and healthy options. The breakfast menu includes a variety of pancakes, waffles, crepes, and omelettes, as well as Cora's signature fruit-filled dishes.
