Cruffin


Cruffin is a type of pastry that combines elements of a croissant and a muffin. The cruffin is made by proofing (also called proving) and baking laminated dough in a muffin mould. The dough's lamination gives the finished cruffin a flaky, layered texture.

The cruffin was first created in Australia by a bakery called Lune Croissanterie. The bakery, located in Melbourne, began selling cruffins in 2013. The cruffin quickly gained popularity and is now sold in bakeries worldwide.

Preparation[edit | edit source]

The cruffin is made by laminating dough, a process that involves folding butter into the dough multiple times to create thin layers. The laminated dough is then shaped into a muffin form and baked. After baking, the cruffin can be filled with a variety of ingredients, such as jam, cream, or chocolate.

Variations[edit | edit source]

There are many variations of the cruffin. Some bakeries add sweet or savory fillings, while others top the cruffin with sugar or glaze. In addition, some bakeries have created their own unique versions of the cruffin, such as the "matcha cruffin" which is filled with matcha cream, or the "lemon curd cruffin" which is filled with lemon curd.
