History[edit | edit source]
Dinosaur Bar-B-Que was founded by John Stage and his partners in Syracuse, New York. Initially, the business started as a mobile concession stand at motorcycle shows, fairs, and festivals. The founders, who were motorcycle enthusiasts, saw an opportunity to combine their passion for bikes with their love for barbecue.

The second location opened in Rochester, New York in 1998, followed by a third in Harlem, New York City in 2004. The Harlem location, situated on 125th Street, became a cultural landmark, attracting both locals and tourists.
The chain continued to grow, opening additional locations in cities such as Troy, New York, Stamford, Connecticut, and Newark, New Jersey. Each restaurant maintains the brand's signature style, offering a menu that features a variety of smoked meats, homemade sides, and signature sauces.
