Henry Jones was born on 19 July 1862 in Hobart, Tasmania, Australia. He was the son of John Jones, a convict, and Emma Jones. Henry left school at the age of 12 to work in a jam factory, where he began his career in the food industry.

In 1891, Henry Jones purchased a small jam factory in Hobart and began producing jams under the brand name "IXL," which stands for "I excel." The company quickly grew, and by the early 20th century, it had expanded its product line to include a variety of preserved fruits, sauces, and other food products.
The success of Henry Jones IXL can be attributed to Jones's innovative marketing strategies and his commitment to quality. He was one of the first Australian businessmen to use advertising extensively, and he ensured that his products were made from the finest ingredients.
