Shanxi cuisine
Shanxi Cuisine is one of the many regional styles of Chinese cuisine. Originating from Shanxi Province, this culinary tradition is known for its extensive use of vinegar, its wide variety of noodles and dumplings, and its emphasis on hearty, robust flavors.

Shanxi cuisine has a history dating back to the Qin Dynasty (221-206 BC). The region's unique geographical location and climate have greatly influenced its culinary culture. Braised Pork with Shanxi Mature Vinegar is a classic dish, featuring tender, succulent pork belly braised in a rich sauce made from Shanxi mature vinegar.

Shanxi cuisine has had a significant influence on the culinary traditions of other regions in China, particularly in the north.
