Spettekaka
Spettekaka or Spettkaka is a traditional Swedish dessert, specifically from the province of Scania. The name translates to "spit cake", which refers to the method of preparation.
History[edit | edit source]
The origins of Spettekaka date back to the 17th century. It was traditionally made for special occasions such as weddings and birthdays. The dessert has been recognized as a traditional specialty guaranteed by the European Union since 2014.
Preparation[edit | edit source]
Spettekaka is made from a batter of egg whites, sugar, and potato starch. The batter is poured onto a rotating spit, which is then placed over an open fire or a special oven. The heat caramelizes the sugar in the batter, creating a hard, sweet crust. The cake is then decorated with piped icing in intricate patterns.
Cultural Significance[edit | edit source]
In Scania, Spettekaka is often served at major celebrations and is considered a symbol of the region. It is also a popular tourist attraction, with several bakeries offering demonstrations of the traditional baking process.
