Ample Hills Creamery was founded in 2011 by Brian Smith, a former screenwriter, and Jackie Cuscuna, a former school teacher. The name "Ample Hills" comes from a line in the Walt Whitman poem "Crossing Brooklyn Ferry." The company started with a single shop in Brooklyn's Prospect Heights neighborhood and quickly gained popularity due to its unique flavors and high-quality ingredients.
In 2014, Ample Hills opened a second location in Gowanus, Brooklyn, which also houses their main production facility. The company has since expanded to multiple locations across New York City, as well as shops in Los Angeles, Miami, and Disney World.

All of Ample Hills' ice cream is made in-house, with the company prioritizing locally sourced ingredients. The milk and cream used in their ice cream comes from grass-fed cows at local farms, and the company also makes their own mix-ins, such as the brownies and cookies found in many of their flavors.
