Fitou AOC
Fitou AOC is a French Appellation d'Origine Contrôlée (AOC) for wines produced in the Languedoc-Roussillon region, specifically within the Aude department. Established in 1948, Fitou is one of the oldest AOCs in the Languedoc, known for its robust red wines primarily made from Carignan, Grenache, and Syrah grapes.
Geography and Climate[edit | edit source]
The Fitou AOC is located in the southern part of France, nestled between the Corbières mountains and the Mediterranean Sea. This region benefits from a Mediterranean climate, characterized by hot, dry summers and mild, wet winters. The proximity to the sea provides a moderating effect, which helps in maintaining the acidity and freshness of the wines.
The vineyards are planted on varied terrains, including rocky hillsides and coastal plains, which contribute to the diversity of the wines produced. The soil composition ranges from limestone and clay to schist, each imparting unique characteristics to the wines.
Viticulture[edit | edit source]
Viticulture in Fitou is deeply rooted in tradition, with many vineyards being family-owned for generations. The primary grape variety is Carignan, which must constitute at least 20% of the blend. This grape is known for its deep color and tannic structure. Grenache and Syrah are also significant, adding fruitiness and spice to the wines.
The vines are typically bush-trained, a method well-suited to the windy conditions of the region. This training system helps protect the grapes from the intense sun and allows for better air circulation, reducing the risk of disease.

Fitou wines are known for their deep color, full body, and rich flavors. They often exhibit aromas of dark fruits such as blackberries and plums, with hints of herbs, spices, and sometimes a touch of earthiness. The wines are typically aged in oak barrels, which adds complexity and structure.
The tannins in Fitou wines are usually firm, providing a good aging potential. These wines pair well with hearty dishes such as grilled meats, stews, and aged cheeses.
Sub-regions[edit | edit source]
The Fitou AOC is divided into two distinct sub-regions: Fitou Maritime and Fitou Montagneux. Fitou Maritime is closer to the coast and features sandy and clay soils, while Fitou Montagneux is more inland with schist and limestone soils. These sub-regions produce wines with subtle differences in flavor and structure.
