Joe's Kansas City Bar-B-Que was originally founded as "Oklahoma Joe's" in 1996 by Jeff Stehney, Joyce Stehney, and Joe Don Davidson. The restaurant was initially located inside a gas station at the corner of 47th Avenue and Mission Road in Kansas City, Kansas. The unique setting of the restaurant inside a gas station quickly became a notable aspect of its identity.
In 2014, the restaurant rebranded to "Joe's Kansas City Bar-B-Que" to better reflect its Kansas City roots and to distinguish itself from other barbecue establishments.

Joe's Kansas City Bar-B-Que offers a variety of barbecue dishes, including brisket, pulled pork, ribs, burnt ends, and sausage. One of the most popular items on the menu is the "Z-Man Sandwich," which consists of slow-smoked beef brisket, smoked provolone cheese, and two onion rings on a toasted Kaiser roll, topped with barbecue sauce.
