Lindemans Brewery was founded in 1822 by Frans Lindemans, a farmer who began brewing beer as a way to keep his workers occupied during the winter months. The brewery remained a small, family-run operation for many years, producing traditional lambic beers using spontaneous fermentation.
In the 1930s, the brewery began to focus more on beer production as the demand for lambic beers grew. The Lindemans family expanded the brewery and began to produce a wider variety of lambic styles, including gueuze, kriek, and framboise.

Lindemans Brewery uses traditional methods to produce its lambic beers. The brewing process begins with a mixture of barley and wheat, which is mashed and boiled with aged hops. The wort is then transferred to shallow, open-air fermentation vessels called coolships, where it is exposed to wild yeast and bacteria from the surrounding environment.
The beer is then aged in oak barrels for one to three years, during which time it undergoes spontaneous fermentation. The result is a complex, sour beer with a unique flavor profile.
