Soups[edit | edit source]
Gazpacho is a cold soup made of raw, blended vegetables. It originated in the southern regions of Spain, particularly in Andalusia. Gazpacho is widely eaten in Spain and Portugal, particularly during the hot summers, as it is refreshing and cool.
Salmorejo is a purée consisting of tomato and bread, originating from Cordoba in Andalucia, south Spain. It is usually garnished with diced Spanish serrano ham and diced hard-boiled eggs.
Sopa de Gato is a traditional Spanish soup. Its name translates to "cat soup," but it does not contain any cat meat. Instead, it is a hearty soup made with potatoes, garlic, and paprika.

Cocido Madrileño is a traditional chickpea-based stew from Madrid. The dish is a classic of Spanish cuisine and is served in three courses, or "vuelcos".
Fabada Asturiana is a rich Spanish bean stew, originally from and most commonly found in the region of Asturias, but widely available throughout the whole of Spain and in Spanish restaurants worldwide.
Callos a la Madrileña is a traditional stew made from tripe and chickpeas, a specialty of Madrid. It is typically served with bread and a glass of Spanish red wine.
