Nobu is a chain of high-end sushi restaurants founded by chef Nobu Matsuhisa, actor Robert De Niro, and film producer Meir Teper. The first Nobu restaurant was opened in Beverly Hills, California in 1987, and the chain has since expanded to include locations in major cities around the world.

Nobu Matsuhisa, a Japanese chef who had trained in Tokyo and Lima, opened his first restaurant in Beverly Hills in 1987. The restaurant quickly gained a reputation for its innovative fusion of Japanese and Peruvian cuisine, a style that Matsuhisa had developed during his time in Peru. In 1994, Matsuhisa partnered with Robert De Niro and Meir Teper to open the first Nobu restaurant in New York City. The restaurant was an immediate success, earning critical acclaim and attracting a celebrity clientele.

Nobu's menu is a blend of traditional Japanese dishes and Peruvian ingredients. Signature dishes include Black Cod with Miso and Yellowtail Sashimi with Jalapeño. The restaurants also offer a range of sushi and sashimi options, as well as a selection of sake and cocktails.

As of 2021, there are more than 40 Nobu restaurants in cities around the world, including London, Tokyo, Melbourne, Dubai, and Moscow. Each restaurant is designed to reflect the local culture while maintaining the minimalist aesthetic that is characteristic of the Nobu brand.

Nobu has been widely praised for its innovative cuisine and stylish interiors. The restaurants have received numerous awards, including several Michelin stars. However, they have also been criticized for their high prices and the perceived exclusivity of their clientele.
