Pleșcoi sausages

From WikiMD's Wellness Encyclopedia

Pleșcoi sausages are a traditional Romanian food product, originating from the village of Pleșcoi, in the Buzău County of Romania. They are made from mutton and seasoned with chili peppers and garlic, giving them a distinctive spicy flavor.

History[edit | edit source]

The tradition of making Pleșcoi sausages dates back to the 19th century, when shepherds in the region began using mutton and local spices to create a unique type of sausage. The recipe has been passed down through generations and remains a closely guarded secret among the families in Pleșcoi.

Production[edit | edit source]

The production of Pleșcoi sausages involves a specific process. The meat is first minced and mixed with salt, garlic, and chili peppers. The mixture is then stuffed into sheep intestines and smoked over a wood fire. The sausages are typically consumed fresh, but they can also be dried for preservation.

Recognition[edit | edit source]

In 2011, the European Commission added Pleșcoi sausages to its list of Protected Designation of Origin (PDO) products. This recognition ensures that only sausages produced in the Pleșcoi region, following the traditional recipe and methods, can be sold under the name "Pleșcoi sausages".
