Avruga is a culinary product designed to serve as an alternative to traditional caviar. Distinctly made from herring and various other ingredients, Avruga sets itself apart from regular caviar as it lacks any form of fish roe.

Composition[edit | edit source]

The primary component in Avruga is herring, which makes up about 40% of the product. The other ingredients include:

The blend of these ingredients results in a product that closely mimics the taste and texture of caviar, though it doesn't contain the characteristic fish roe.

Production and Certification[edit | edit source]

Avruga is the brainchild of the Spanish company Pescaviar. However, the production of this unique caviar substitute is carried out by Cataliment, a company specialized in the creation of culinary products.

Notably, Avruga carries the "Chain of Custody" certification from the Marine Stewardship Council, as highlighted by marine fishery consultants MacAlister Elliott. This certification assures consumers of the sustainability and traceability of the seafood products.

Usage[edit | edit source]

Much like traditional caviar, Avruga is used as a delicacy in various culinary settings, often gracing the tables at high-end events and celebrations. Its unique composition offers a sustainable and equally delightful alternative to caviar.
