Gỏi cuốn, also known as Vietnamese spring rolls, summer rolls, or salad rolls, are a popular dish in Vietnamese cuisine. Unlike their deep-fried counterpart, the chả giò (Vietnamese fried spring rolls), gỏi cuốn are served fresh and are not cooked. They are typically made with a combination of fresh vegetables, herbs, pork, and shrimp, all wrapped in a translucent bánh tráng (rice paper). Gỏi cuốn are often served with a hoisin sauce mixed with peanuts or a fish sauce-based dipping sauce known as nước chấm.

The main ingredients for gỏi cuốn include bánh tráng (rice paper), cooked shrimp, boiled pork slices, vermicelli noodles (made from rice), and an assortment of fresh herbs such as basil, mint, and cilantro. Lettuce and other vegetables like bean sprouts and cucumber are also commonly added for crunch and freshness.

To prepare gỏi cuốn, the rice paper is briefly soaked in water to make it pliable. Then, it is laid flat on a work surface, and the ingredients are placed on top, usually starting with the herbs and lettuce, followed by a layer of vermicelli noodles, pork, and shrimp. The rice paper is then tightly rolled around the filling, tucking in the ends as one goes, to form a neat, cylindrical shape.
