List of Irish dishes
The cuisine of Ireland has evolved from centuries of social and political change. The cuisine is founded upon the crops and animals farmed in its temperate climate. The introduction of the potato in the second half of the 16th century heavily influenced Ireland's cuisine thereafter and, as a result, is often associated with Ireland. Representative Irish dishes include Irish stew, shepherd's pie, bacon and cabbage, boxty, coddle, and colcannon.
Traditional Irish Dishes[edit]
Irish Stew[edit]
Irish stew is a traditional stew made from lamb, or mutton, potatoes, carrots, onions, and parsley. It originated in Ireland but appears in cookbooks worldwide. It is sometimes used to refer to any thick soup containing pieces of meat, such as beef or chicken, and vegetables.
Shepherd's Pie[edit]
Shepherd's pie is a traditional dish of minced meat (usually lamb or mutton) topped with mashed potatoes and baked in the oven until golden brown. It is a staple of Irish cuisine and is often served in pubs and homes across the country.
Bacon and Cabbage[edit]
Bacon and cabbage is a dish traditionally associated with Ireland. It consists of sliced back bacon boiled with cabbage and potatoes. Sometimes other vegetables such as turnips, carrots and onions are added.
Boxty[edit]
Boxty is a traditional Irish potato pancake. The dish is mostly associated with the north midlands, north Connacht and southern Ulster, in particular the counties of Mayo, Sligo, Donegal, Fermanagh, Longford, Leitrim and Cavan.
Coddle[edit]
Coddle is an Irish dish which is often made to use up leftovers, and therefore without a specific recipe. However, it most commonly consists of layers of roughly sliced pork sausages and rashers (thinly sliced, somewhat fatty back bacon) with sliced potatoes and onions.
Colcannon[edit]
Colcannon is a traditional Irish dish of mashed potatoes with kale or cabbage. It is also the name of a song about the dish.
