List of pies, tarts and flans is a comprehensive catalogue of various types of pies, tarts, and flans from around the world. These are all types of baked goods typically consisting of a pastry dough casing that contains a filling of various sweet or savory ingredients.

Pies[edit | edit source]

A pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savory ingredients. Pies can be either "filled", where a dish is covered by pastry and the filling is placed on top of that, or "top-crust," where the filling is placed in a dish and covered with a pastry/potato mash top before baking.

  • Apple pie: A fruit pie in which the principal filling ingredient is apple.
  • Banoffee pie: An English dessert pie made from bananas, cream and toffee from boiled condensed milk.
  • Cherry pie: A pie baked with a cherry filling.
  • Key lime pie: An American dessert made of Key lime juice, egg yolks, and sweetened condensed milk in a pie crust.

Tarts[edit | edit source]

A tart is a baked dish consisting of a filling over a pastry base with an open top not covered with pastry. The filling is usually sweet, but can be savory.

  • Bakewell tart: An English confection consisting of a shortcrust pastry with a layer of jam and a sponge using ground almonds.
  • Egg tart: A kind of custard tart found in Cantonese cuisine deriving from the English custard tart and Portuguese pastel de nata.
  • Lemon tart: A dessert dish, a variety of tart. It has a pastry shell with a lemon flavored filling.

Flans[edit | edit source]

A flan is a type of pie, with a base of shortcrust pastry. An example is a quiche. In both savory and sweet flans the filling tends to be based on a custard-type mix.

  • Quiche: A French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables.
  • Creme caramel: A custard dessert with a layer of clear caramel sauce, as opposed to crème brûlée which is custard with a hard caramel top.
