List of Vietnamese Dishes
Vietnamese cuisine encompasses the foods and beverages of Vietnam, and features a combination of five fundamental tastes (Vietnamese: ngũ vị) in overall meals. Each Vietnamese dish has a distinctive flavor which reflects one or more of these elements. Common ingredients include fish sauce, shrimp paste, soy sauce, rice, fresh herbs, fruits and vegetables. Vietnamese recipes use lemongrass, ginger, mint, Vietnamese mint, long coriander, Saigon cinnamon, bird's eye chili, lime, and basil leaves.
Soups and Broths[edit | edit source]
1. Phở: A Vietnamese soup consisting of broth, rice noodles, herbs, and meat, usually beef or chicken.
2. Bún bò Huế: A spicy, lemongrass rice vermicelli noodle soup served with fresh herbs and vegetables.
3. Bánh canh: A thick noodle soup made with tapioca flour or a mixture of rice and tapioca flour.
Rice Dishes[edit | edit source]
1. Cơm tấm: A street-food dish made with broken rice and a grilled pork chop, often served with a small bowl of fish sauce on the side.
2. Chả giò: Deep-fried spring roll made with minced pork, cloud ear fungus, and diced vegetables rolled up in a sheet of moist rice paper.
3. Bánh chưng: A traditional Vietnamese rice cake which is made from glutinous rice, mung beans, pork and other ingredients.
Noodle Dishes[edit | edit source]
1. Bún chả: A Vietnamese dish of grilled pork and noodle, which is thought to have originated from Hanoi, Vietnam.
2. Bún riêu: A Vietnamese meat rice vermicelli soup. There are several varieties of bún riêu, including bún riêu cua, bún riêu cá, and bún riêu ốc.
3. Mì Quảng: A Vietnamese noodle dish that originated from Quảng Nam Province in central Vietnam.
Desserts[edit | edit source]
1. Chè: Any traditional Vietnamese sweet beverage, dessert soup or pudding. Varieties of Chè are made with mung beans, black-eyed peas, kidney beans, tapioca, jelly, fruit, and coconut cream.
2. Bánh flan: A type of caramel custard made with eggs, sugar, and milk or cream.
3. Bánh bò: A sweet, chewy sponge cake made from rice flour, water, sugar, and yeast.
