List of antioxidants in food
List of Antioxidants in Food is a comprehensive compilation of various antioxidants found in different types of food. Antioxidants are substances that can prevent or slow damage to cells caused by free radicals, unstable molecules that the body produces as a reaction to environmental and other pressures.
Overview[edit | edit source]
Antioxidants are categorized into two broad divisions: water-soluble (hydrophilic) and lipid-soluble (hydrophobic). The body cannot manufacture most antioxidants, so they must be supplied in the diet. They are believed to play a role in preventing the development of chronic diseases such as cancer, heart disease, stroke, Alzheimer's disease, Rheumatoid arthritis, and cataracts.
