List of Vegetable Dishes

A vegetable dish refers to a preparation or recipe that primarily uses vegetables as the main ingredient. These dishes can be served as a main course, side dish, or used as an ingredient in other dishes. The following is a list of notable vegetable dishes from various cuisines around the world.

  • Coleslaw - A salad consisting primarily of finely-shredded raw cabbage with a salad dressing, commonly either vinaigrette or mayonnaise.

  • Minestrone - A thick soup of Italian origin made with vegetables, often with the addition of pasta or rice.
  • Borscht - A sour soup common in Eastern Europe and Northern Asia. In English, the word "borscht" is most often associated with the soup's variant of Ukrainian origin, made with beetroots as one of the main ingredients.
  • Gazpacho - A cold soup made of raw, blended vegetables. A classic of Spanish cuisine, it originated in the southern region of Andalusia.

Main Dishes[edit | edit source]

  • Ratatouille - A French Provençal stewed vegetable dish, originating in Nice, and sometimes referred to as ratatouille niçoise.
  • Vegetable lasagna - A type of lasagna dish made with various vegetables, cheese and tomato sauce.
  • Vegetable stir fry - A quick, versatile and nutritious dish that uses a variety of fresh vegetables. It is a staple in East Asian cuisines, particularly Chinese cuisine.

Side Dishes[edit | edit source]

  • Mashed potatoes - A dish prepared by mashing boiled potatoes with milk and butter, often seasoned with salt, pepper and various herbs.
  • Grilled vegetables - Vegetables that have been cooked on a grill or griddle, often served as a side dish.
  • Roasted vegetables - Vegetables that have been oven-roasted, which caramelizes their natural sugars and brings out their flavor.
