Alheira is a type of Portuguese sausage known for its distinctive shape and unique ingredients. Unlike most sausages, which are primarily meat-based, Alheira is made with a variety of ingredients including bread, poultry, and game meat. The sausage is traditionally smoked and can be served in a variety of ways.

The Alheira was created by the Portuguese Jews during the Inquisition. To avoid suspicion and persecution, they made and ate sausages that looked like the pork sausages eaten by their Christian neighbors. However, since Jewish dietary laws prohibit the consumption of pork, they used a variety of other meats and bread in their sausages. The name "Alheira" comes from the Portuguese word alho, meaning garlic, a common ingredient in the sausage.

Alheira is typically smoked over a wood fire, which gives it a distinctive flavor. It can be served in a variety of ways, including grilled, roasted, or fried. It is often served with potatoes and greens, and sometimes with a fried egg on top. Despite its origins as a meat substitute, Alheira is now enjoyed by people of all backgrounds in Portugal and has become a staple of Portuguese cuisine.

There are many varieties of Alheira, each with its own unique blend of ingredients. Some are made with game meat, such as venison or wild boar, while others are made with poultry, such as chicken or turkey. There are also vegetarian versions of Alheira made with vegetables and bread.

Cultural Significance[edit | edit source]

In 2011, Alheira was voted one of the 7 Wonders of Portuguese Gastronomy, highlighting its importance in Portuguese culture and cuisine. It is a common dish in the region of Trás-os-Montes and is celebrated annually with the Alheira Festival in the town of Mirandela.
