Aura cheese

Aura Cheese is a type of blue cheese produced by the Valio company in Finland. It is named after the Aura river that runs through the city of Turku, where the cheese is made.

Aura Cheese was first produced in the 1990s as a result of experimentation by Valio's cheese masters. The cheese is made from cow's milk and is aged for a minimum of three months. The cheese is known for its strong, pungent flavor and creamy texture, which is a result of the Penicillium roqueforti mold used in its production.

The production of Aura Cheese begins with the pasteurization of cow's milk. The milk is then inoculated with Penicillium roqueforti and left to ferment. The curd is cut into small pieces, salted, and placed into molds. The cheese is then aged for a minimum of three months, during which time it develops its characteristic blue veins and strong flavor.
