Kuzhi paniyaram

Kuzhi paniyaram is a traditional South Indian dish made from fermented batter. The batter is typically made from a mixture of black lentils (urad dal) and rice, similar to the batter used for idli and dosa. The dish is popular in the Indian states of Tamil Nadu, Karnataka, and Andhra Pradesh, where it is known by different names.

Preparation[edit | edit source]

The preparation of kuzhi paniyaram involves two main steps: the preparation of the batter and the cooking of the paniyaram. The batter is prepared by soaking black lentils and rice separately for a few hours, then grinding them into a smooth paste. The paste is then fermented overnight to develop its characteristic flavor.

The fermented batter is then poured into a special paniyaram pan, which has multiple small, round depressions. The pan is heated, and a small amount of batter is poured into each depression. The paniyaram are then cooked on both sides until they are golden brown.

There are two main variations of kuzhi paniyaram: sweet and savory. The sweet version is made by adding jaggery (a type of unrefined sugar), coconut, and cardamom to the batter. The savory version, also known as 'karra' or 'spicy' paniyaram, is made by adding ingredients like onion, green chili, and curry leaves to the batter.

Kuzhi paniyaram is typically served with chutney, sambar, or milk. It can be eaten for breakfast, as a snack, or as part of a larger meal.

Kuzhi paniyaram is an important part of South Indian cuisine and culture. It is often prepared during festivals and special occasions. In some communities, it is also a traditional dish prepared during the Pongal festival.
