Subak Hwachae is a traditional Korean dessert that is often consumed during the summer season. It is a type of Hwachae, which is a general term for Korean traditional punch. Subak Hwachae specifically refers to watermelon punch, with 'Subak' meaning watermelon in Korean.

The main ingredient of Subak Hwachae is watermelon. The watermelon is typically cut in half, and the inside flesh is scooped out and mixed with other fruits such as peaches, pears, and grapes. The mixture is then put back into the watermelon shell, which serves as a bowl.

In addition to fruits, sugar or honey is often added for sweetness, and carbonated water or milk is used to create a refreshing punch. Some variations of Subak Hwachae also include sikhye, a traditional sweet Korean rice beverage.

Subak Hwachae is especially popular during the summer months in Korea due to its refreshing qualities. It is often served at parties and gatherings, and is also a common dessert in Korean Chinese restaurants.

The dish is also associated with Boknal, the three hottest days of the Korean summer according to the lunar calendar. During Boknal, it is traditional to eat foods that are believed to combat the heat, and Subak Hwachae is one of these foods.
