Șvaițer
Șvaițer is a traditional Romanian cheese made from sheep's milk. It is a type of brined cheese, similar to feta in texture and taste. The cheese is named after the region of Șvaițer in Romania, where it is primarily produced.
History[edit | edit source]
The production of Șvaițer cheese dates back to the Middle Ages, when shepherds in the Șvaițer region began making cheese from the milk of their sheep. The cheese was traditionally made in wooden barrels and aged in brine, a process that gives it its distinctive flavor and texture.
Production[edit | edit source]
Șvaițer cheese is made by curdling sheep's milk with rennet, a substance derived from the stomachs of ruminant animals. The curdled milk is then cut into small pieces and heated until it becomes firm. The cheese is then pressed to remove excess whey and placed in a brine solution to age. The aging process can take anywhere from a few weeks to several months, depending on the desired flavor and texture.
Characteristics[edit | edit source]
Șvaițer cheese is white in color and has a crumbly texture. It has a tangy, slightly salty taste, similar to feta cheese. The cheese is often used in salads, sandwiches, and traditional Romanian dishes. It can also be eaten on its own or with bread.
