Șvaițer

Șvaițer is a traditional Romanian cheese made from sheep's milk. It is a type of brined cheese, similar to feta in texture and taste. The cheese is named after the region of Șvaițer in Romania, where it is primarily produced.

Șvaițer cheese is made by curdling sheep's milk with rennet, a substance derived from the stomachs of ruminant animals. The curdled milk is then cut into small pieces and heated until it becomes firm. The cheese is then pressed to remove excess whey and placed in a brine solution to age. The aging process can take anywhere from a few weeks to several months, depending on the desired flavor and texture.
