Secondary food processing refers to the transformation of ingredients into edible products. This is the stage where what is commonly recognized as food is produced: bread, cheese, pasta, and beverages. Secondary processing involves baking, fermenting, and cooking processes.
Tertiary food processing[edit | edit source]
Tertiary food processing is the commercial production of what are often called processed foods. These are ready-to-eat or heat-and-serve foods, such as cereal, frozen dinners, and canned foods. This stage often involves adding preservatives, flavors, and other additives to enhance taste and shelf life.
Health and safety[edit | edit source]
Food processing has both benefits and drawbacks. On the positive side, it can make foods safer by eliminating microorganisms and toxins. It can also make food more accessible and convenient. However, processed foods are often criticized for health concerns including high levels of sugar, salt, and fat, as well as the presence of additives and preservatives.
