The production process of Mao Feng tea is meticulous and requires skilled hands. The tea leaves are plucked in early spring when they are at their most tender and flavorful. Only the top two leaves and a bud are selected for processing.

After plucking, the leaves undergo a series of steps including withering, fixation, rolling, and drying. The withering process involves spreading the leaves on bamboo trays and allowing them to wilt naturally. This helps to reduce the moisture content and enhance the flavor.

Next, the leaves are pan-fired or steamed to halt oxidation and preserve their green color. This step is known as fixation. The leaves are then rolled by hand or machine to shape them into thin, twisted strands. Finally, the leaves are dried to remove any remaining moisture.

Mao Feng tea is known for its unique characteristics. The leaves are long and slender, resembling the shape of a sparrow's tongue, which is why it is sometimes referred to as "Sparrow's Tongue Tea." The color of the leaves is a vibrant green, and they have a delicate, slightly sweet aroma.

When brewed, Mao Feng tea produces a pale yellow-green liquor with a smooth and mellow taste. It has a refreshing and slightly vegetal flavor, often described as grassy or floral. The tea leaves can be steeped multiple times, with each infusion revealing different layers of flavor.
