Keto Ice Cream Sandwiches[edit]

Keto Ice Cream Sandwiches are a delicious, low-carb dessert that can be enjoyed on a keto diet. They are made with homemade keto cookies and keto ice cream, and are a perfect treat for those hot summer days.

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. Add the melted butter and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Roll out the dough between two pieces of parchment paper until it's about 1/4 inch thick.
  5. Cut out cookies using a round cookie cutter and place them on a baking sheet lined with parchment paper.
  6. Bake the cookies for 10-12 minutes, then let them cool completely.
  7. Once the cookies are cooled, scoop a generous amount of keto ice cream onto one cookie, then top with another cookie to form a sandwich. Repeat with the remaining cookies and ice cream.
  8. Place the ice cream sandwiches in the freezer for at least 2 hours before serving.
