Bacon, red pepper, and mozzarella frittata

Bacon, red pepper, and mozzarella frittata recipe[edit | edit source]

  1. 8 eggs
  2. 1 red pepper, diced
  3. 1/2 cup shredded mozzarella cheese
  4. 1/4 cup chopped green onions (optional)

Step by step instructions

  1. In a large mixing bowl, whisk together the eggs, heavy cream, salt and pepper.
  2. Remove the bacon from the skillet and set aside. Leave the bacon grease in the skillet.
  3. Add the diced red pepper to the skillet and sauté for 2-3 minutes.
  4. Pour the egg mixture into the skillet with the bacon and red pepper.
  5. Sprinkle the shredded mozzarella cheese and cooked bacon on top of the frittata.
  6. Place the skillet in the oven and bake for 15-20 minutes or until the eggs are set and the cheese is melted.
  7. Garnish with chopped green onions (if desired) and serve.
