Bacon, red pepper, and mozzarella frittata recipe[edit | edit source]
- 8 eggs
- 1 red pepper, diced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions (optional)
Step by step instructions
- In a large mixing bowl, whisk together the eggs, heavy cream, salt and pepper.
- Remove the bacon from the skillet and set aside. Leave the bacon grease in the skillet.
- Add the diced red pepper to the skillet and sauté for 2-3 minutes.
- Pour the egg mixture into the skillet with the bacon and red pepper.
- Sprinkle the shredded mozzarella cheese and cooked bacon on top of the frittata.
- Place the skillet in the oven and bake for 15-20 minutes or until the eggs are set and the cheese is melted.
- Garnish with chopped green onions (if desired) and serve.
