This region, historically at the crossroads of ancient trade routes like the Silk road, boasts a culinary tradition shaped by its nomadic and agrarian heritage. While many central Asian dishes are based on grains, there's still a wealth of keto-compatible foods to discover:
Kazakhstan[edit | edit source]
Traditionally made with meat (often horse or mutton) boiled in its own broth and served over pasta. For a keto version, skip the pasta or replace it with zucchini noodles or cabbage strips.

Kyrgyzstan[edit | edit source]
A dish made from mutton or beef liver, lungs, and heart, all fried in animal fat with onions and spices.
A hearty meat soup. Ensure the recipe is free from potatoes and other high-carb vegetables.
Ingredients:
500g lamb or beef, cut into pieces 2 tbsp animal fat or ghee 1 onion, sliced thinly 3 cloves garlic, minced 2 liters water Salt and pepper to taste Fresh herbs for garnish (parsley or dill) Instructions:
In a pot, heat the fat or ghee and sauté onions until translucent. Add the meat pieces and brown on all sides. Add the garlic and continue to sauté for another minute. Pour in the water and bring to a boil. Reduce heat and let simmer for about 2 hours. Season with salt and pepper. Garnish with fresh herbs before serving.
Tajikistan[edit | edit source]
A dish made with layers of flatbread, fresh herbs, and a tangy yogurt sauce. For a keto version, replace the flatbread with keto-friendly flatbread or simply enjoy the herbs and yogurt sauce as a salad.
Skewered and grilled meat, usually lamb or beef.
Turkmenistan[edit | edit source]

A traditional sausage made from horse meat.
A meat pie. For a keto version, use a low-carb dough made from almond or coconut flour.
Uzbekistan[edit | edit source]
