West African cuisine, spanning countries from senegal to nigeria, offers a vibrant combination of flavors, textures, and cooking methods. While staple foods in this region such as yam, cassava, and maize are high in carbohydrates, there's still a plethora of dishes and adaptations that can fit the keto diet. Dive into these keto-compatible takes on some of west africa's iconic dishes.

Grilled chicken marinated in a zesty onion and lemon sauce. The carb count can be lowered by using fewer onions and omitting any carrots.
A rich, nutty soup traditionally made with meat and groundnut paste, but avoiding any starchy vegetables like potatoes or cassava.

A thick and hearty soup made from melon seeds and spinach. For a keto version, skip yam or cassava thickeners and focus on spinach, fluted pumpkin leaves, or other green leafy vegetables. Pair with Cauliflower rice instead of traditional fufu.

Made from the afang leaf and palm nut, this rich soup can be enjoyed with meats and fish, omitting any starchy thickeners.
Ingredients:
- 1 cup ground egusi (melon seeds)
- 2 cups spinach, chopped
- 500g beef or chicken, cut into bite-sized pieces
- 2 tablespoons palm oil
- 1 onion, chopped
- 2 scotch bonnet peppers, finely chopped (adjust to taste)
- 2 cups meat broth
- Salt and seasoning cubes to taste
Instructions:
- In a pot, heat palm oil and sauté onions till translucent.
- Add the meat or chicken and brown slightly.
- Add the broth, scotch bonnet peppers, and seasoning. Bring to a simmer.
- Sprinkle in the ground egusi and stir. Let it simmer for 10 minutes.
- Add the spinach and cook for another 5 minutes. Adjust salt and seasoning as needed. Serve hot.

A tomato-based soup with meat or fish, avoiding starchy vegetables.
Using very green plantains in moderation can fit a keto diet when craving this spicy, iconic snack. However, consumption should be limited due to plantains' carb content.

- 1 whole chicken, cut into pieces
- 3 large onions, thinly sliced
- Juice of 3 lemons
- 2 tablespoons of Dijon mustard
- 1/4 cup of olive oil
- Salt and pepper to taste
- 1-2 habanero peppers (optional)
- 2 tablespoons of apple cider vinegar (substitute for wine)

- Marinate the chicken with lemon juice, mustard, half of the olive oil, salt, pepper, and vinegar.
- Refrigerate for at least 2 hours or overnight.
- In a large pan, sauté onions in remaining olive oil until golden.
- Add the marinated chicken and cook until done.
- Serve with a side of sautéed vegetables or a keto-friendly side dish.
