Baingan Bharta[edit | edit source]
Baingan Bharta is a popular Indian dish made with eggplant, tomatoes, and a variety of spices. This version is keto-friendly, meaning it's low in carbs and high in healthy fats.
Ingredients[edit | edit source]
- 1 large eggplant
- 2 tomatoes, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- 2 tablespoons olive oil
- Fresh coriander leaves for garnish
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Prick the eggplant with a fork and roast it in the oven for about 30 minutes, or until it's soft and the skin is charred.
- Once the eggplant is cool enough to handle, peel off the skin and mash the flesh. Set it aside.
- Heat the olive oil in a pan over medium heat. Add the cumin seeds and let them sizzle.
- Add the chopped onion, garlic, ginger, and green chilies to the pan. Cook until the onions are golden brown.
- Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft.
- Add the mashed eggplant to the pan and mix well. Cook for another 10 minutes.
- Garnish with fresh coriander leaves before serving.
