Cauliflower Potato Salad is a delicious, keto-friendly alternative to traditional potato salad. It's a perfect side dish for any meal and is sure to satisfy your cravings for a hearty, comforting salad without the carbs.
Ingredients[edit | edit source]
- 1 large head of cauliflower, cut into bite-sized pieces
- 1/2 cup mayonnaise
- 1/4 cup Dijon mustard
- 1/4 cup dill pickles, chopped
- 1/2 cup red onion, finely chopped
- 2 hard-boiled eggs, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions[edit | edit source]
- Steam the cauliflower until it's tender but still has a bit of crunch. This should take about 5-7 minutes.
- While the cauliflower is steaming, mix together the mayonnaise, Dijon mustard, chopped pickles, and chopped red onion in a large bowl.
- Once the cauliflower is done, let it cool for a few minutes before adding it to the bowl with the other ingredients.
- Add the chopped hard-boiled eggs and fresh parsley to the bowl. Season with salt and pepper to taste.
- Mix everything together until the cauliflower is well-coated in the dressing. You can serve it immediately, or let it chill in the fridge for a few hours to let the flavors meld together.
