Ham Cheese Quiche with Cauliflower Crust[edit | edit source]
Ingredients[edit | edit source]
- Cauliflower Crust:
* 1 large head of cauliflower, riced * 1/2 cup mozzarella cheese, shredded * 1/4 cup parmesan cheese, grated * 1/2 teaspoon salt * 1/2 teaspoon black pepper * 1/2 teaspoon garlic powder * 1 egg, beaten
- Quiche Filling:
* 1 cup ham, diced * 1 cup cheddar cheese, shredded * 4 eggs * 1/2 cup heavy cream * 1/2 teaspoon salt * 1/2 teaspoon black pepper
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- For the crust, pulse the cauliflower in a food processor until it's riced.
- Microwave the riced cauliflower for 5 minutes, then squeeze out as much water as possible.
- Mix the cauliflower with the mozzarella, parmesan, salt, pepper, garlic powder, and egg.
- Press the mixture into the bottom of a pie dish and bake for 20 minutes.
- For the filling, mix the ham, cheese, eggs, cream, salt, and pepper together in a bowl.
- Pour the filling into the baked crust and bake for another 30 minutes, or until the quiche is set and lightly browned on top.
- Let the quiche cool for a few minutes before slicing and serving.
