Keto Carbonara with Zoodles[edit]
Keto Carbonara with Zoodles is a delicious and healthy alternative to traditional pasta dishes. This recipe is perfect for those following a keto diet, as it is low in carbs and high in fats. The zoodles (zucchini noodles) replace the high-carb pasta, while the creamy carbonara sauce adds a rich and satisfying flavor.
Ingredients[edit]
- 2 large Zucchini
- 2 tablespoons Olive Oil
- 4 slices of Bacon
- 2 Garlic Cloves, minced
- 1/2 cup Heavy Cream
- 1/2 cup grated Parmesan Cheese
- 2 large Eggs
- Salt and Pepper to taste
- Parsley for garnish
Instructions[edit]
- Using a spiralizer, turn the zucchini into noodles and set aside.
- Heat the olive oil in a large pan over medium heat. Add the bacon and cook until crispy. Remove the bacon from the pan and set aside.
- In the same pan, add the minced garlic and cook until fragrant.
- Add the heavy cream to the pan and bring to a simmer. Reduce the heat to low and stir in the parmesan cheese until melted.
- In a separate bowl, beat the eggs. Slowly add a small amount of the hot cream mixture to the eggs, stirring constantly to prevent the eggs from scrambling.
- Add the egg and cream mixture back into the pan and stir until the sauce thickens.
- Add the zoodles to the pan and toss until they are coated in the sauce. Cook for 2-3 minutes, or until the zoodles are tender.
- Season with salt and pepper to taste. Crumble the cooked bacon on top and garnish with parsley before serving.
