Keto Carbonara with Zoodles is a delicious and healthy alternative to traditional pasta dishes. This recipe is perfect for those following a keto diet, as it is low in carbs and high in fats. The zoodles (zucchini noodles) replace the high-carb pasta, while the creamy carbonara sauce adds a rich and satisfying flavor.

  1. Using a spiralizer, turn the zucchini into noodles and set aside.
  2. Heat the olive oil in a large pan over medium heat. Add the bacon and cook until crispy. Remove the bacon from the pan and set aside.
  3. In the same pan, add the minced garlic and cook until fragrant.
  4. Add the heavy cream to the pan and bring to a simmer. Reduce the heat to low and stir in the parmesan cheese until melted.
  5. In a separate bowl, beat the eggs. Slowly add a small amount of the hot cream mixture to the eggs, stirring constantly to prevent the eggs from scrambling.
  6. Add the egg and cream mixture back into the pan and stir until the sauce thickens.
  7. Add the zoodles to the pan and toss until they are coated in the sauce. Cook for 2-3 minutes, or until the zoodles are tender.
  8. Season with salt and pepper to taste. Crumble the cooked bacon on top and garnish with parsley before serving.
