This is a delicious and nutritious recipe for a Keto-friendly Cauliflower Hash with Eggs and Poblano Peppers. It's a great way to start your day with a healthy and satisfying meal.

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Toss the cauliflower florets in olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until golden brown and crispy.
  3. While the cauliflower is roasting, heat a large skillet over medium heat. Add the diced poblano peppers and onion, and sauté until they are soft and slightly caramelized.
  4. Add the minced garlic to the skillet and cook for another minute, until fragrant.
  5. Once the cauliflower is done roasting, add it to the skillet and stir everything together.
  6. Make two wells in the hash and crack an egg into each one. Cover the skillet and let it cook for 3-5 minutes, or until the eggs are cooked to your liking.
  7. Season with additional salt and pepper if needed, and serve hot.
