This is a recipe for a delicious and healthy Keto Chicken Curry Bell Pepper Sandwich. This sandwich is a perfect meal for those following a keto diet as it is low in carbs and high in protein and healthy fats.
Ingredients[edit | edit source]
- 2 large bell peppers
- 1 lb chicken breast
- 2 tbsp curry powder
- 1 tbsp coconut oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
Instructions[edit | edit source]
- Cut the bell peppers in half and remove the seeds.
- In a pan, heat the coconut oil over medium heat.
- Add the chicken breast to the pan and season with curry powder, salt, and pepper.
- Cook the chicken until it is no longer pink in the middle, about 7-10 minutes.
- Remove the chicken from the pan and let it cool.
- Once cooled, shred the chicken and mix it with the mayonnaise, onions, and cilantro.
- Spoon the chicken mixture into the bell pepper halves.
