This is a delicious and hearty Keto friendly recipe for Chicken Curry Stew. It's packed with flavor and will keep you satisfied while sticking to your low-carb diet.

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the chicken chunks and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, garlic, and ginger. Cook until the onion is translucent.
  4. Add the curry powder and turmeric, stirring to coat the onion mixture.
  5. Return the chicken to the pot, add the coconut milk and chicken broth. Bring to a simmer.
  6. Add the cauliflower, salt, and pepper. Cover and simmer for 20 minutes, or until the cauliflower is tender.
  7. Serve hot, garnished with fresh cilantro.
