Keto Chicken Nuggets with Green Bean Fries and BBQ Mayo[edit | edit source]
Ingredients[edit | edit source]
- 1 lb chicken breast, cut into nugget-sized pieces
- 1 cup almond flour
- 1/2 cup grated parmesan cheese
- 1 egg, beaten
- 1 lb green beans, trimmed
- 1/2 cup mayonnaise
- 2 tbsp sugar-free BBQ sauce
- Salt and pepper to taste
- Olive oil for frying
Instructions[edit | edit source]
- Season the chicken pieces with salt and pepper.
- In a shallow dish, combine the almond flour and parmesan cheese.
- Dip each chicken piece into the beaten egg, then coat in the almond flour mixture.
- Heat the olive oil in a frying pan over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 3-4 minutes per side.
- While the chicken is cooking, blanch the green beans in boiling water for 2 minutes, then drain and pat dry.
- In a separate bowl, combine the mayonnaise and BBQ sauce to make the BBQ mayo.
- Serve the keto chicken nuggets with the green bean fries and BBQ mayo on the side.
