  1. Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and roast for 10-15 minutes, or until they are golden brown and fragrant.
  2. Let the hazelnuts cool for a few minutes, then transfer them to a clean kitchen towel. Rub them together to remove as much of the skins as possible.
  3. Place the skinned hazelnuts in a food processor and process until they turn into a smooth butter.
  4. Add the cocoa powder, erythritol, coconut oil, vanilla extract, and salt to the food processor. Process again until everything is well combined.
  5. Transfer the spread to a jar and let it cool to room temperature. It will thicken as it cools.
