Keto Dairy-Free Vanilla Custard[edit | edit source]
This is a delicious and creamy Keto Dairy-Free Vanilla Custard recipe that is perfect for those on a ketogenic diet. It's dairy-free, sugar-free, and low in carbs.
Ingredients[edit | edit source]
- 1 can (13.5 oz) of Coconut Milk
- 4 Egg Yolks
- 1/4 cup of Erythritol
- 1 Vanilla Bean (or 1 tsp of Vanilla Extract)
- A pinch of Sea Salt
Instructions[edit | edit source]
- Open the can of coconut milk and pour it into a saucepan.
- Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and the bean to the saucepan.
- Heat the coconut milk and vanilla on medium heat until it starts to simmer.
- In a separate bowl, whisk the egg yolks and erythritol together until well combined.
- Slowly pour the hot coconut milk into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
- Once all the coconut milk has been incorporated, pour the mixture back into the saucepan.
- Cook on low heat, stirring constantly, until the custard thickens and coats the back of a spoon.
- Remove from heat and stir in the sea salt.
- Pour the custard through a fine-mesh strainer into a bowl to remove the vanilla bean and any lumps.
- Cover and refrigerate for at least 2 hours before serving.
